Spicy Asian Plum Sauce
Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.
2 Tbsp. olive oil
1/2 cup red onions, minced
2 large cloves garlic, peeled and minced
2 Tbsp. Bailey Farms Jalapeno Hot Sauce
1-1/2 pounds ripe plums, pitted and diced small
1/2 cup honey
1 tsp. Madras curry powder
1/2 tsp. allspice
1/4 cup soy sauce
juice of 1 lime
juice of 1 lemon
juice of 1 orange
Cook the red onions, garlic and hot sauce in the olive oil until the onions aretender. Add the plums and stir in the curry powder and allspice. Thoroughly blend the spices into the mixture, then add the honey, soy sauce, and fruit juices.
Cook the sauce over medium-low heat for an hour or so uncovered, stirring often. The consistency should be like a thick tomato sauce. Remove from the heat and allow the sauce to cool to room temperature. Fill bottles of the sauce and keep refrigerated. It can be frozen for up to a couple of months.
