Spicy and Aromatic Fried Chicken
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
8-9 oz boneless chicken- cut into bite size
1 tbsp ground coriander seed
1 tsp ground cumin seed
1/2 tsp chili powder
1/2 tsp turmeric power
1/2 tsp ground black pepper
8 cloves garlic
6 shallots
2 tbsp chopped ginger
1 green chile
A handful of fresh mint leaves
A handful of fresh coriander leaves
1 egg
1 tsp salt
2 tbsp corn flour
Oil for deep-frying

In food processor, add garlic, ginger, shallots, green chili, mint and coriander leaves. Blend until smooth. In a mixing bowl, add blended herbs mixture and the rest of the ingredients except oil. Mix well and let the chicken marinade for 15-20 minutes.
Heat oil in the deep fryer over the medium heat. When the oil is hot, deep fry the chicken until golden brown. Serve hot with some salad and chili sauce.
