Spice-Marinated Dungeness Crabs
Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.
2 large Dungeness crabs, cooked, separated and cracked
1 cup olive oil
3/4 cup wine vinegar
1 Tbsp. Bailey Farms Red Habanero Hot Sauce
2 fresh cloves garlic, peeled and minced
1/2 cup chopped cilantro
1 lime, sliced and squeezed
1 tsp. oregano
1 tsp. black pepper
salt, to taste
Place the cooked crabs in a shallow bowl and add the oil, vinegar, hot sauce, garlic, parsley, lemon, oregano and pepper. Season the mixture to taste with some salt, then cover and refrigerate for an hour.
Yields 2-4 servings.
