Spanish Spinach Fritters

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

2 (10-oz) packages frozen chopped spinach
1 cup grated Parmesan cheese
2 cups packaged herb-flavored stuffing mix
1/4- 1/2 cup chopped green onions
1/2 cup roasted and peeled diced green chiles (jalapeno, for example)
1/2 cup toasted pinones (pine nuts)
6 eggs, beaten
12 Tbsp (1 1/2 sticks) butter, melted

Instructions:

Cook and drain the spinach as directed on the package. Let coo. In a bowl, combine the spinach, cheese, stuffing mix, onion, chile, and pine nuts. Mix well. Stir in the beaten eggs and melted butter until the mixture is evenly moistened. Preheat the oven to 350°F. Using a tablespoon, drop spoonfuls of the batter onto a greased cookie sheet. Bake 10 to 15 minutes, or until lightly browned.

Makes about 3 dozen fritters.
