Southwestern Corn Dip

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

2 (10-oz) packages frozen corn, cooked and drained
1 cups sharp Cheddar cheese, grated
1 (4-oz) can drained pimentos, drained
1 1/2 Tbsp jalapenos, chopped
2 Tbsp cilantro, chopped
1 cup sour cream
1/2 cup mayonnaise
1/4 tsp Bailey Farms Hot Sauce
Salt to taste
Tortilla chips for dipping

Instructions:

In a large bowl, combine all ingredients. Cover and refrigerate. Serve with chips.

Makes about 7 cups.
