Singapore Hot Fried Rice

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

5 cups cooked long grain white rice
1 medium onion, chopped
1 jalapeno pepper, deveined and seeded, chopped
1 medium green bell pepper, deveined and seeded, chopped
1 egg lightly beaten
2 cloves garlic, minced
4 Tbsp. peanut oil
1Tbsp. water
2 Tbsp. raisins for garnish
3 scallions, chopped, for garnish

Instructions:

Heat 2 Tbsp. of peanut oil in a wok or large skillet and add the egg to make a thin omelet. Remove and allow to egg to cool. Shred the omelet and reserve.

In a blender or food processor fitted with the steel blade, puree the onion, jalapeno pepper, garlic and bell pepper into a paste.

Add the remaining oil to the wok and fry the paste gently for about 2 minutes. Gently toss in the rice, separating the grains and stir-frying as added. Continue to toss and stir-fry for another 3 minutes.

Top with the shredded egg, raisins and scallions. Serve as an accompaniment to any simple dinner.
