Serrano Shrimp Saute
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
1 cup oil
2 pounds medium shrimp (shells intact)
1 Tbsp. salt
1 tsp. pepper, coarsely ground
1 Tbsp. oregano, crushed
1 cup onion, thinly sliced
1 Tbsp. garlic, mashed
2 serrano chiles, sliced
juice of 2 lemons or 4 limes
Instructions:
In large pan or wok heat the oil. Add the washed, unshelled shrimps and stir-fry for 3 minutes. Add the seasonings and remaining ingredients. Just prior serving add the freshly squeezed lemon or lime juice.
