Serrano Cheese Spinach
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
1 (10 oz.) package spinach
3 oz. cream cheese
4 serrano peppers (pickled)
1-1/2 Tbsp. heavy whipping cream
1/4 tsp. salt
1/2 tsp. pepper
1 garlic clove (minced)
Instructions:
Thaw the spinach, then rinse and squeeze out all the remaining water by hand.
Chop the serrano peppers and mix the cream cheese, peppers, garlic, salt and pepper and heavy whipping cream with the spinach.
Bake at 350F for 20-30 minutes or until dish looks like it is cooked all the way through. Serve hot with Pita points, tortilla chips or crackers.
