Senegalese Yam Fritters
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1-1/2 pounds yams
1 egg, beaten
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme
pinch of cayenne pepper
1 green chile, such as jalapeno, seeds and stems removed, minced
1 medium-size onion, chopped fine
1 medium-size tomato, chopped fine
1/2 cup breadcrumbs
peanut oil for frying
Instructions:
Boil the yams with the skins on until tender, then peel and mash until smooth. Saute the chopped onion, tomato and chili pepper in a few tablespoons of oil until brown, then add the seasonings and sauteed mixture to the yams. Add the beaten egg and breadcrumbs and mix well. Form into small patties and saute in the peanut oil until the fritters are brown on both sides.
Yields 4-6 servings.
