Screaming Stuffed Jalapeno Poppers
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 package cream cheese
4 cloves chopped garlic
1/4 cup finely chopped sun-dried tomatoes
1 tbsp fresh basil leaves, chopped
salt and pepper to taste
10 jalapeno peppers
10 slices of bacon
toothpicks
Instructions:
5 servings
Serving Size: 2 jalapeno poppers
Preheat oven to 425 F degrees. Line a baking sheet with parchment paper.
Cut the stem from each jalapeno and remove the seeds, carefully so the jalapenos don’t break. In a large bowl mix the cream cheese with sun dried tomatoes, basil, garlic and salt and pepper.
Fill a pastry bag or Ziploc bag with the cream cheese mixture. Squeeze the filling into each jalapeno, don’t overfill them too much as they will spurt of during cooking. Wrap each pepper with 1 slice of bacon and secure the bacon with a toothpick.
Bake for 20 minutes and then turn the oven on to broil and bake for another couple minutes until bacon is nice and crisp.
