Sauteed Shrimp with Chili Pepper Mango Salsa

Cayenne is a red or green hot chili pepper used to flavor chile food dishes and is also used for medicinal purposes. Named for the city of Cayenne in French Guiana, it is a cultivar of Capsicum annuum related to bell peppers, jalapeños, and others.

For the salsa:

4 jalapeno peppers, diced
2 serrano peppers, diced
2 cayenne peppers, diced
4 Roma tomatoes, diced
5-6 small onions, diced
1 mango, peeled and chopped

For the shrimp:

1 lb shrimp, peeled and deveined
2 Tbsp fresh dill, chopped
1 tsp chili powder
1/4 cup Marsala cooking wine

Salsa Preparation Instructions:

Combine all ingredients in a bowl and mix well.

Shrimp Preparation Instructions:

Heat a sauté pan to medium-high heat. Add wine and dill. Add shrimp. Sprinkle with chili powder. Sauté about 5 minutes or until shrimp is done. Divide salsa over two plates. Top each with shrimp. Serve.
