Sauce Chien
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
3 Red jalapenos and 3 green jalapenos, coarsely chopped
1/2 tsp. oregano leaves
1/2 tsp. salt
1/4 yellow onion, chopped fine
2 garlic cloves, finely chopped
1/4 cup white vinegar
1 Tbsp. olive oil
Instructions:
A Caribbean condiment of lightly pickled red and green chiles.
Combine the chiles in a bowl with oregano, salt, onion and garlic.
Heat the vinegar just until bubbles appear around the edge. Pour it over the chile mixture, then stir in the olive oil. Let it cool to room temperature.
This sauce is good with seafood (either grilled or stewed), barbecued meats, chewy pizza-like breads, rice and bean dishes.
