Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
6 medium tomatoes (about 2 pounds) peeled, seeded and coarsely chopped or a 28 oz. can tomatoes
1/3 cup lime juice
1 slice of a medium onion
1 jalapeno chile, seeded and chopped
1 tsp. sugar
several dashes of bottled hot pepper sauce
1 cup orange juice
1/3 cup tequila
ice cubes
celery stalks
Instructions:
Place the fresh tomatoes or undrained canned tomatoes in a blender with the lime juice, onion, jalapeno pepper, sugar and hot pepper sauce. Cover and blend until smooth. Strain the mixture through a sieve lined with cheesecloth.
Transfer to a serving pitcher and stir in the orange juice and tequila. Serve over ice cubes with celery stalks.
Makes 8 (4 oz.) servings.
