Salsa de Aguacate (Avocado Salsa)

The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!

Ingredients:

3 tomatillos – husks removed
2 cups water
2 large avocados, peeled and chopped
2 habanero chiles, chopped
3 cloves garlic
1 small onion, chopped

Instructions:

Combine the tomatillos and water. Boil them until they are soft, about 10-12 minutes. Drain the tomatillos and discard the water. Puree all the ingredients in a blender or food processor, adding a little water if needed to make the salsa smooth and creamy.

Serve with tostadas or on a bed of greens for a salad.
