Salmon Ceviche
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
½ lb raw fresh wild salmon
½ English cucumber, diced
½ large mango, peeled and diced
½ large avocado, peeled and diced
1/2 jalapeno, minced
2 Tbsp cilantro, minced
1 lime, zested and juiced
1 Tbsp sesame seeds
1 Tbsp sesame oil
2 tsp black sesame seeds
Instructions:
Dice the salmon, making sure to remove bones. Mix all ingredients together in a medium bowl. Transfer to serving bowl and chill till ready to serve (up to a couple of hours). Serve with crackers or cucumber slices.
