Raspberry Palomas
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
12 fresh raspberries
6 slices fresh jalapeno
2 ounces agave syrup
3 ounces freshly squeezed lime juice
12 ounces freshly squeezed grapefruit juice
12 ounces silver tequila (tequila blanco)
Ice cubes
Club soda
Raspberries for garnish, optional
Instructions:
Serves: 6
Muddle together raspberries, jalapeno slices, agave syrup and lime juice in a small bowl. Pour mixture into a pitcher. Add grapefruit juice and tequila to pitcher and stir to combine.
Fill six lowball glasses with ice. Divide tequila mixture evenly among glasses. Top with club soda and two raspberries. Gently stir and serve.
