Quesadillas
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
10-12 fresh large flour tortillas
3 cups jalapeno jack cheese, grated
Instructions:
1. Place a tortilla in a non-stick skillet over medium heat.
2. Sprinkle the cheese and garnishes (minced jalapeno chiles, chopped green onions, minced red bell pepper, chorizo, cilantro – any one garnish or a combination) evenly over 1/2 of the tortilla and fold over. Toast on each side to melt cheese. Serve warm.
