Pollo Con Naranjas (Orange Chicken)
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
Ingredients:
1 tsp. salt
1/4 tsp. cinnamon
1/8 tsp. ground cloves
1 chicken, cut into 4 pieces
2 Tbsp. olive oil
1 onion, chopped
2 cloves garlic, chopped
2/3 cup fresh orange juice
2/3 cup chicken stock
2 Tbsp. raisins
2 jalapeno chiles, stemmed, seeded and chopped
1/2 cup slivered almonds
3 oranges, peeled and thinly sliced
2 Tbsp, fresh cilantro, chopped
Instructions:
Mix the salt, cinnamon and cloves together, and then rub this all over the chicken pieces to flavor them.
Heat the olive oil in a large skillet, add the chicken and fry, turning occasionally until all chicken pieces are browned all over. Remove them from the skillet and pour off any excess fat. Keep the chicken warm.
Add the onion and garlic and fry gently until golden brown. Return the chicken to the skillet and stir in the orange juice, chicken stock, raisins and chiles. Cover and simmer for 1 hour or until the chicken is cooked and tender.
Add the almonds and the orange slices, and stir gently. Heat through over low heat for about 5 minutes. Serve the orange chicken with chopped cilantro.
