Pineapple-Jalapeno Salsa
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
2 cups diced fresh or canned pineapple, drained
1/2 cup Crosse & Blackwell Shrimp Sauce
1/4 cup red bell pepper, diced
3 Tbsp. fresh cilantro, finely chopped
2 Tbsp. diced jalapenos
1 tsp. fresh lime juice
1/4 tsp. salt
Instructions:
Combine the pineapple, shrimp sauce, bell pepper, cilantro, jalapenos, lime juice and salt in a medium bowl. Cover and refrigerate for 1 hour.
Makes 2 cups.
