Pickled Red Onions and Jalapenos
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
2 medium red onions (about 1 1/2 lbs), very thinly sliced (about 6 cups)
3 jalapeno peppers, thinly sliced
4 to 5 cups boiling water
1/2 cup apple cider vinegar
1/2 cup water
3 Tbsp sugar
1 tsp whole peppercorns
1 Knorr Chipotle Minicube, crumbled
1 Knorr Cilantro Minicube, crumbled
Instructions:
Combine onions with jalapeno peppers in a large bowl. Pour in boiling water to cover onion mixture. Let stand 5 minutes drain. Stir in remaining ingredients. Let stand 10 minutes. Cover and refrigerate covered 1 hour or until ready to serve.
Tip: Best if made ahead, flavor develops over time.
Makes 5 cups.
