Pickled Jalapenos 2
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 pound ‘BIG’ jalapenos
7 garlic cloves
1/2 pound onions, french cut
1/2 pound carrots
2 oz. black peppercorns
2 Tbsp. oregano
1/2 oz. fresh thyme
1/2 oz. bay leaves
2 Tbsp. kosher salt
1/2 gallon apple cider vinegar
4 oz. olive oil
Instructions:
Boil the vinegar and add the olive oil. Pour the liquid over all the ingredients. Let the mixture cool. Refrigerate before eating.
These look great as ornamental nuances in your kitchen (especially if you can find some red jalapenos to mix in with the green) …but they taste too good to leave in the window for long.
