Peruvian Aji Sauce
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1/4 head of lettuce, torn into pieces (iceberg is fine, romaine is better)
3 jalapeno chiles, seeds and veins removed
1/4 cup mayonnaise
5 green onions
1/2 bunch of cilantro leaves (try to avoid stems)
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
Instructions:
Put all ingredients into a blender or food processor and process until smooth. It should come out bright green in color.
This makes a nice spread for bread, as a sauce for steak or tacos, or as a dip for chips.
