Peppers in a Blanket

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

large can of biscuits
large jalapenos , enough to have 2 for each biscuit
cheese, your choice
meat, your choice

Instructions:

This is a lazy mans relleno!

Roast the chiles under the broiler in an oven, until blisters begin to appear, turn once. Make a slit down the side of the peppers from the stem to the tip. Take a small spoon (ie.. 1/2 teaspoon) and rake the seed cavity out of the peppers. Then stuff the chiles with cheese and meat.

Here are a few suggestions:

-prosciutto and mozzarella
-cheddar and cooked hamburger
-Monterey Jack and sausage.

Take a rolling pin and flatten out the biscuits as thin as possible. Cut them in half and wrap around the chiles. Bake in oven at 375F until the dough begins to brown.
