Peanut Noodles
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Ingredients:
1 lb pasta
Fresh herbs
Sesame seeds
For the Peanut Sauce:
1 Tbsp sesame oil
2 large cloves of garlic, finely chopped
2-3 Thai chile peppers, finely chopped
1/2 cup creamy peanut butter
3 Tbsp sugar
1 1/2 Tbsp lemon juice
1 Tbsp soy sauce
1/4 tsp cayenne pepper, or to taste
3/4 cup lite coconut milk
Salt to taste
Instructions:
Prepare the pasta according to the manufacturer’s instructions.
Prepare the Easy Peanut Sauce. Toss the pasta with the sauce. Stir in the fresh herbs and sesame seeds, and serve hot or cold.
Easy Peanut Sauce:
Heat the sesame oil in a small saucepan over medium-high heat. Add the garlic and Thai chile peppers and cook for 3-4 minutes, stirring often. Add the peanut butter, sugar, and lemon juice stirring well to dissolve the sugar. Add the remaining ingredients, stirring until well combined. Cook until desired temperature and consistency. Serve hot or cold over noodles, vegetables, tofu, or rice.
Serves 4-6.
