Papaya Chutney
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Ingredients:

2 Cups ripe papaya – cut into small pieces
2-3 green chiles
4 tablespoon sugar
2 tsp oil
Rock salt/Sendha Namak to taste
1-2 tsp finely chopped green chiles
1 tablespoon chopped coriander leaves
Procedure:
Heat oil in a pan.
Slit the green chiles into 2 parts lengthwise and add them to the oil. Temper them.
Add the papaya and toss well for a minute.
Add in the salt and sugar. Mix well. Do not over cook.
Add the chopped green chili and coriander leaves.
