Oysters Diablo

Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.

Ingredients:

1 dozen large oysters, cleaned in deep shells
Bailey Farms Red Habanero Hot Sauce (a few drops or more for each oyster)
2 hard-boiled egg yolks
2 raw egg yolks
1 tsp. fresh lime juice
2 Tbsp. melted butter
salt and fresh ground pepper, to taste
4 Tbsp. bread crumbs
1/4 cup chopped fresh cilantro

Instructions:

Preheat your oven to 350F. Place one oyster in each shell and drizzle with the hot sauce.

In a small glass bowl, mash the hard-boiled yolks in with the raw yolks, lime juice, butter and salt. Spoon some of the mixture over the oysters and cover with the bread crumbs. Bake the oysters on a cookie sheet for about 5 minutes or until the bread crumbs appear toasted. Garnish with the chopped cilantro.
