Orange Bell Pepper Salsa
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 orange bell pepper
3 jalapeno peppers
1 large tomato
1 small white onion, halved
2 cloves garlic
1 tablespoon fresh cilantro
Salt and pepper to taste
2 teaspoons lime juice
1 tablespoon vinegar
Instructions:
Set your oven to broil.
Stem and de-seed the orange bell pepper and slice it in half. Set the halves skin side up on an oiled baking sheet.
Stem the jalapenos. Slice them in half lengthwise and place them on the baking sheet. Slice the tomato in half and place it skin side up on the baking sheet.Place the onion and garlic cloves on the baking sheet.
Broil 10 – 12 minutes or until the chili pepper skins begin to char. Remove from heat. Place the chili peppers in a sealed container to steam. This will loosen the skins. Remove the skins when cooled and add to a food processor. Remove the skins from the tomato and add to food processor. Add onion to food processor. Squeeze the roasted garlic from the skins and add to food processor. Add lime juice and vinegar and process to desired consistency. Serve!
