Nasi Goreng
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
2 1/2 cup cooked rice
2 tsp fermented shrimp paste
1 tbsp sweet soy sauce
1 tsp balm sugar
1 tbsp tamarind paste
3 shallots
3 cloves garlic
1 red chile
1 1/2 tbsp oil
Garnish- sliced shallots, sliced chile, stir fried chicken/prawn or fish, lime wedges, lettuces, cucumber, etc.
Instructions:
Grind together shallots, garlic and chile until smooth paste.
Heat oil in the large pan/wok over the medium heat and stir fry shallot-garlic-chili paste until aromatic.
Add shrimp paste and stir for few minutes. Add balm sugar and tamarind paste. Use the back of the wooden spoon to press and scramble the paste and fry until powder-liked or granulated
Add rice, and mix well. Stir fry continuously and every grain of rice coated with flavor.
Serve hot with garnishes on the side.
