Mike’s Big Taco Bowl

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 lb ground beef
1/2 bag tortilla chips (8 oz)
1 cup shredded Mexican cheese blend (Monterey Jack, cheddar, queso Asadero)
2 tsp taco seasoning
1 Tbsp garlic, minced
3 Roma tomatoes, chopped
2-3 jalapeno peppers, chopped
Your favorite hot sauce (Try one of Bailey Farms hot sauces!)

Instructions:

Thoroughly cook the ground beef in a large sauté pan. Reduce heat to low and add garlic and taco seasoning along with ¼ cup water. Simmer 10 minutes or longer for a fuller flavor.

In a large serving bowl add tortilla chips. Pour taco meat over top of chips. Mix well. Add cheeses. Top with tomatoes and jalapenos and hot sauce to taste.
