Mexican Zucchini Casserole

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 egg
1 Tbsp canola oil
1/8 tsp salt
1/8 tsp pepper
1 cup shredded zucchini
1 Tbsp seeded, finely chopped jalapeno pepper
1 Tbsp finely chopped onion
1/3 cup biscuit/baking mix
2 Tbsp shredded Cheddar cheese

Instructions:

In a small bowl, beat the egg, oil, salt, and pepper. Add the zucchini, jalapeno, and onion. Stir to coat. Stir in biscuit mix and cheese.

Pour into a 15-oz. baking dish coated with nonstick cooking spray. Bake at 375° F for 18-20 minutes or until a toothpick comes out clean. Let stand for 10 minutes before serving.

Serves 2.
