Mexican Rice II

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 cup long grain white rice
1 Tbsp vegetable oil
1/2 cups chicken broth
1/2 onion, finely chopped
2-3 sweet mini peppers, finely chopped
1 fresh jalapeno
1 tomato, seeded and chopped
1 cube chicken bouillon
salt and pepper to taste
1/2 tsp ground cumin
1/2 cup chopped fresh cilantro
1 clove garlic

Instructions:

In a medium saucepan, cook rice in oil over medium heat for about 3 minutes. Pour in chicken broth, and bring to a boil. Stir in onion, sweet mini peppers, jalapeno, and diced tomato. Season with bouillon cube, salt,pepper, cumin, cilantro, and garlic. Bring to a boil, cover, and reduce heat to low. Cook for 20 minutes.

Serves 6.
