Mexican Goulash
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1/2 bag of pre-cooked fajita meat (beef, chicken, or pork)
1 can Ro-tel Tomatoes and Green Chiles
1 can Mexican corn
1 (8-oz) can tomato sauce
1-2 diced chiles (jalapenos, serranos, etc)
1 tsp cilantro (fresh or dried)
Salt and pepper to taste
Instructions:
Pour all ingredients into a skillet, cover, bring to a boil over medium heat and then simmer over medium-low heat for about 20 minutes to let the flavors blend. Serve it over white rice for a quick and easy delicious meal.
I usually serve with “nachos” that consist of Tostito’s Scoops with the shredded Mexican 4-cheese mix melted on top and with my favorite toppings….salsa, sour cream and jalapenos.
