Mexican Chicken with Cubanelle Peppers

Also known as Italian Frying peppers. Cubanelle peppers are large and blocky. They are light green in appearance and they mature red. The thin walls of this pepper make it an excellent choice for frying. This pepper is not hot.

Ingredients:

3-4 Cubanelle peppers, washed, stemmed and sliced into strips
1 Onion, sliced
Olive oil
Garlic, minced
2 chicken breasts, pounded flat
Cumin
Dried chipotle pepper
Garlic powder
Salt and pepper
Mexican cheese

Instructions:

Heat olive oil in pan and add Cubanelles, onion, and garlic. Saute till tender. Remove from pan.

Season chicken breasts with cumin, chipotle powder, salt, pepper, and garlic powder to taste. Place chicken into heated pan and cook, turning to brown both sides, till done through.

Top chicken with Mexican cheese and allow to melt. Remove from pan and serve with cooked pepper mixture.
