This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.

Ingredients:

5 tortillas, cut into 1/2-inch strips
Vegetable oil for frying
2 chicken breast halves
1 small onion, quartered
1/2 clove garlic
2 tomatoes, chopped
1 serrano chile, minced
1/2 white onion, chopped
3 Tbsp vegetable oil
4 eggs, beaten

Instructions:

Fry tortilla strips in hot oil until crisp. Boil chicken breasts, quartered onion, and garlic in water to cover for 20 minutes. Drain and dice the chicken breasts. Saute tomatoes, serrano, and 1/2 onion in 3 Tbsp vegetable oil. Add tortilla strips and chicken. Add eggs and scramble.
