Mascarene Chile Paste

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

15 red jalapenos, seeds and stems removed, quartered
2 medium onions, peeled and quartered
2 Tbsp. grated ginger
1 Tbsp. vinegar
1/4 cup vegetable oil

Instructions:

Add the jalapenos, onions and ginger to a blender or food processor and process to a smooth paste, adding a little water if necessary. Transfer the mixture to a bowl and stir in the vinegar.

Add the oil to a saucepan and heat until quite hot and stir in the paste, mixing well. Reduce the heat and simmer until the paste thickens. Take care that the paste does not burn. Simmer for about 10 minutes, then remove and allow to cool. Store in clean jars.

Yields About 3 cups.

This paste can be used to make sauces for roasted meats and grilled seafood and is good with rice and potatoes.
