Maria’s Roasted Salsa Verde
The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!
12 oz. tomatillos (husks removed)
2-4 serrano chiles
1/2 cup water
4 cloves garlic
1/2 ripe avocado (optional)
Roast the tomatillos and serrano chiles in a skillet for 8-10 minutes, turning frequently. They will char and blister but this is ok. Remove the stems from the serranos and transfer them to a blender with the roasted tomatillos . Add the garlic, 1/2 cup of water and salt to taste. Add the avocado(optional) for a creamier salsa. Blend at high speed for 1 minute.
This is a very popular salsa in Mexico. It is great with tortilla chips but is also very good with other Mexican foods such as fajitas, tacos or flautas. It is also great on eggs or omelets. To change the flavor of this salsa simply change the chile pepper used. Try it with red Fresnos, yellow Caribes, or various other medium-hot dry chiles. Be creative and enjoy!
