Margarita Onion Salsa Verde

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat.

10 small tomatillos, diced
2 cups diced vidalia onion
1 jalapeño chile, seeded and finely chopped, or to taste
3 Tbsp. cilantro, finely chopped
2 Tbsp. tequila
2 Tbsp. lime juice
2 Tbsp. sugar, or to taste
1 tsp. salt, or to taste
1/4 tsp. freshly ground black pepper

Combine all the ingredients and season to taste, adding more sugar if too acidic. Serve with grilled meats, such as chicken or pork, or with tortilla chips. Best made ahead of time to allow the flavors of the salsa to develop.

Makes about 5 cups.
