Mango-Cucumber Relish

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

2 large, ripe mangoes, peeled, pitted and cut into 1/2-inch pieces
1/3 cup fresh lime juice
1-1/2 Tbsp. cider vinegar
1/3 tsp. sugar
finely ground sea salt, to taste
1 large cucumber, peeled, seeded and cut into small pieces
1 jalapeno chile, stemmed, seeded and chopped
1-1/2 Tbsp. chopped fresh basil

Instructions:

Combine the lime juice, vinegar, sugar and salt in a large bowl. Add the mango, cucumber, jalapeno chile and basil, then toss well, cover and refrigerate for about an hour.
