Ingredients:

2 (2 poundseach) lobsters, grilled, meat removed and coarsely chopped

Roasted Tomatillo Cocktail Sauce:

8 tomatillos, husks removed, rinsed well and coarsely chopped
1/2 small red onion, coarsely chopped
1 jalapeno, finely chopped
3 Tbsp. olive oil
3 Tbsp. fresh lime juice
3 Tbsp. chopped cilantro
1 Tbsp. honey
salt and freshly ground pepper
lime wedges
cilantro leaves

Instructions:

Combine all the ingredients in a food processor and blend until almost smooth. Season with honey, salt and pepper and divide among the martini glasses. Top with lobster meat and garnish with lime wedges and cilantro.
