Little Cuban Meatballs
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
2 Jalapenos — chopped
1 pound ground beef
1 egg
1/2 cup bread crumbs
1/4 cup milk
1/4 cup Monterrey Jack cheese — grated
1 small onion — chopped
1 tsp. salt
1/4 tsp. pepper
16 oz. Tropical Mango Barbarqui sauce**
**This sauce can be found in the “habanero sauce” category, and is great with these tasty morsels.
Instructions:
Assemble the meatballs using all of the ingredients except the sauce.
Knead the mixture together well and form into little 1″ in diameter meatballs. Cook them uncovered in a 400F oven for about 15-20 minutes.
On the stove top heat the sauce in a small saucepan, then pour it over the meatballs and cook for 3 or 4 minutes. Serve hot with small flour tortillas. Yields 6 servings.
