Lime and Ginger Dressing

This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.

Ingredients:

2-1/2 Tbsp. fresh lime juice
1-1/2 tsp. minced seeded serrano chile
1 tsp. minced peeled fresh ginger
1 garlic clove, pressed
1/2 tsp. sugar
3 Tbsp. vegetable oil
1 Tbsp. oriental sesame oil

Instructions:

Whisk the first 5 ingredients in a small bowl to blend. Gradually whisk in the vegetable and sesame oil. Season with salt and pepper. (Can be made 2 hours ahead of time. Let the dressing stand at room temperature.)

Makes about 1/2 cup.
