Late-Night Pasta Chez Frank

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 (8 oz) package of vermicelli
6 garlic cloves, pressed
2 Tbsp olive oil
4 jalapeno peppers, seeded and minced
8 plum tomatoes, chopped
1/2 tsp salt
1/2 cup chopped fresh basil
Freshly grated parmesan cheese

Instructions:

Prepare pasta according to package directions.

Saute garlic in hot oil in large skillet over medium heat 1 to 2 minutes or until golden. Add peppers and cook, stirring constantly, 1 minute.

Add tomatoes and salt. Cook 3 minutes or until thoroughly heated. Stir in chopped basil. Serve immediately over pasta, and sprinkle with Parmesan cheese.
