Kickin’ Fruity Salsa

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

2 nectarines, chopped
1 cup pineapple, chopped
1/2 red onion, chopped
2 jalapenos, whole
1/3 cup cilantro, chopped
1/2 lime, juiced
salt to taste

Put the 2 jalapenos on the grill or under the broiler until skin is blistered and charred.

Chop, removing seeds for less heat.

Now add all Kickin’ Fruity Salsa ingredients to a bowl, toss, set aside (or over night) in the refrigerator.
