Judy Barbour’s Famous Wild Game Swiss Steak
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
2 lbs elk, deer, or moose steaks
4 Tbsp flour
Salt, pepper, garlic powder, and paprika to season
2 Tbsp oil
1/2 chopped chopped jalapenos (stemmed, seeded, and deveined)
1/2 cup each: celery, carrots, onions, chopped
1/2 cup Cheddar or Monterey Jack cheese, grated (optional)
Instructions:
Mix together flour and seasonings. Pound into meat on each side. Reserve any leftover flour mixture. Brown meat in oil in a heavy skillet. Transfer meat to a large shallow baking dish. Blend reserved flour mixture in a pan in drippings. Add tomatoes with jalapenos, celery, carrots, and onion. Cook, stirring constantly until mixture boils. Pour over meat. Cover and bake for 1 hour at 350° or until meat is tender. Sprinkle cheese, if desired, over meat and let melt.
Note: Beef round or flank steak may be used as alternate meat choice.
