Juarez Quiche

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 pastry shell
1 cup Cheddar cheese
1 1/2 cups Monterey Jack cheese
1 cup milk
1/4 cup diced jalapeno peppers (stemmed, seeded and deveined first)
Salt and cumin
3 eggs, lightly beaten

Instructions:

Bake pastry shell in a microwave pie plate according to directions. Grate cheeses and sprinkle in bottom of shell. heat milk, jalapenos, salt and cumin, but do not boil. Whisk eggs into hot mixture. Pour mixture over cheese. Microwave at 70% power for 10-12 minutes, turning every 3-4 minutes. Pie will be soft in center but will set up during standing time. Let stand at least 30 minutes.
