Jalapenos Rockefeller

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

12 jalapeno peppers, sliced lengthwise
12 oysters, off the shell, chopped
1 small white onion, chopped
2 cups bread crumbs
2 eggs
1 tsp chili powder
1 tsp garlic powder
Salt and pepper to taste

Instructions:

In a large shallow bowl, mix bread crumbs and seasonings. Stir in eggs and chopped oysters. Mix well. Stuff the jalapeno slices with your Rockefeller mixture.

Heat oven to 350 degrees, and bake on a sheet approximately 1 hour. Serve warm.
