Jalapenos Rellenos

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 dozen large jalapenos, roasted, peeled and seeded
8 oz. pork chorizo
8 oz. cream cheese, softened at room temperature
1/4 cup chopped fresh cilantro
1/2 cup buttermilk
1 large egg
1/2 cup corn meal
1/2 cup all-purpose flour
1 tsp. salt

Instructions:
In a medium size skillet brown the pork chorizo well and break into very small bits. When cooled, mix the chorizo bits into 8 oz. of softened cream cheese, and add the 1/4 cup of chopped fresh cilantro, and mix well.

Stuff the jalapenos with the cream cheese-chorizo mixture.

Dredge the jalapenos in plain flour, then dip them in the buttermilk mixture, and finally dredge them in the cornmeal mixture. Fry the stuffed jalapenos in hot oil (at least 375F) for about 1 minute on each side and drain on a rack over paper towels.
