Jalapeno-Vidalia Pie

Ingredients:

1 cup soda cracker crumbs
5 Tbsp. melted butter
2-1/2 cups thinly sliced vidalia onions
2 tsp. Bailey Farms Jalapeno Hot Sauce
2 Tbsp. Canola oil
3/4 cup milk
2 eggs
1 cup grated Jalapeno Jack cheese

Instructions:

To prepare the pie crust:

Mix the cracker crumbs with the butter and spread the mixture in the bottom of a pie pan. Mash up the sides to form a pie crust. Bake the cracker crust for about 8 minutes at 350F, then remove the pie crust from the oven and make the filling.

To prepare the filling:

Saute the vidalia onions in the canola oil with the hot sauce and place the mixture in the partially baked pie crust. Beat the milk and eggs and pour over the vidalia onions. Sprinkle the pepper jack cheese on top and bake the pie for 45 minutes at 350F. Serve the pie immediately.
