Jalapeno Succotash

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

4 jalapeno peppers, chopped
3 cups corn
3 cups lima beans
3 cups green beans, chopped
1 cup heavy cream
2 Tbsp butter
Salt and pepper to taste

Instructions:

In a large pot, boil the corn, lima beans, and green beans. Drain. Into vegetables, mix in jalapeno peppers, cream, and butter. Heat over low flame until butter is melted. Add salt and pepper to taste.
