Jalapeno-Scallion Corn on the Cob
Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.
Ingredients:
1 stick salted butter, softened
3 scallions, chopped fine
2 Tbsp. Bailey Farms Jalapeno Hot Sauce
juice of 1/2 lime
1 Tbsp. chopped cilantro leaves
6 ears corn, shucked and cut in half
Instructions:
Put the butter, scallions, lime juice and cilantro in a bowl and blend well. Set the mixture aside.
Add the corn cobbettes to a pot of boiling salted water and cook for about 3 minutes. Transfer the ears to a serving bowl and toss with half of the jalapeno scallion butter. Take the seasoned corn to a preheated grill and cook over medium high coals for a couple of minutes, turning frequently. Use the remaining butter to baste the corn or dip the ears in the butter before eating.
